Ingredients
5.25-5.75 lbs Whole chicken
1 ½ tsp Adobo all-purpose seasoning
1 tsp Kosher Salt
¼ Cup Soy sauce
2 Packs Sazon seasoning
2 tsp Black pepper (to taste)
¼ Cup Fresh Thyme (to taste)
1 Tbsp fresh oregano
8 to 9 Cloves of Fresh Garlic (to taste)
¼ Cup – Chopped Bell-pepper (green)
¼ Cup red onion
¼ Cup white Onion
1 Tbsp Basil leaves (dry)
1 Tbsp Parsley leaves (dry)
Instructions
· Wash chicken thoroughly with vinegar and lime (lemons may also be used).
· Pat dry chicken and then cut chicken in half.
· Then add all ingredients to the chicken
· Once all ingredients are added, let chicken marinade over night (if pressed for time let chicken marinade for at least 4-to-6 hours before cooking).
· Set oven to 400 Degrees Fahrenheit.
· Cook chicken for 45min (covered).
· After 45min, remove cover, and cook chicken an additional 15min, while periodically basting chicken (uncovered).
· Note: Adjust chicken cook time to your own desired texture.
· After 45min-to-60min, remove chicken. Then check for desired doneness/tenderness.
