Caribbean Style Curry Chicken

Ingredients:

2lbs Chicken parts 

¼ cup bell pepper

7 stems - thyme 

½ onion

5 garlic cloves

1 Tbs ginger

¼ cup celery

1tsp Adobo All Purpose

1 Tbs Old Bay seasonings

1tsp Smoked Paprika

1Tbs curry powder (oriental/Jamaican) can choose curry of your choice.

2 pack Sazon

Italian Seasoning – to taste

2tsp garlic powder

2tsp onion powder

1Tbs Soy Sauce

1Tbs Teriyaki Sauce

1 cup Roasted red bell peppers strips

14.5 oz Diced tomatoes with basil, garlic, and oregano


Instructions:

1. Cut chicken into pieces and add it to a bowl. Wash chicken with lemon and vinegar thoroughly and rinse with clean water. Then add all your ingredients; Soy sauce, Teriyaki sauce, Adobo all purpose seasoning, onion/garlic power, Old Bay, dried Italian seasoning, smoked paprika, Sazon, and curry powder (Oriental & Jamaican). You can choose one kind of curry if you prefer (your favorite curry). Add fresh vegetables; onion, garlic, ginger, thyme, bell pepper (green, yellow, red), and celery.Rub and mix the chicken pieces with all the ingredients, set aside.


2. Heat enough oil to cover bottom of pot, over medium heat. Add sugar until caramelized and stir. Once nicely brown and caramelized, add chicken and combine thoroughly.


3. Add cover and simmer for 10 minutes. Remove cover, stir, and add fresh vegetables from marinade. Add roasted bell pepper, and 1 can of diced tomatoes with basil, garlic, and oregano sauce. Add 1 cup of water to remove remaining seasoning from bowl and pour into pot. Stir mixture chicken mixture well, cover, bring to a boil and let simmer for an additional 10-15 minutes. Serve hot and enjoy!
