Ingredients
4 large potatoes (1 ½ TBSP salt or add salt to taste)
4 eggs
2 cups frozen mixed vegetables (½ tsp. salt or add salt to taste)
½ cup bell pepper (red, yellow, orange) per
1/3 cup onion
¼ cup celery
1 cup mayonnaise (or to taste)
2 TBSP mustard (or to taste)
½ tsp sugar
½ TBSP Goya Adobo
*Let potatoes and vegetables cool in the refrigerator for at least 2 hours. (optional)
*Adjust seasoning to taste if necessary
Instructions
· Preheat water, it accelerates the cooking process. Add water to peeled, washed, and chopped potatoes. After 10 minutes, check for tenderness. Do not overcook.
· Add water to wash and clean vegetables.
· Add water to eggs and boil for 10-12 minutes.
· Chop the remainder of ingredients: celery, onions, and bell peppers.
· Add cool potatoes and vegetables to a bowl, and all remaining ingredients. Combined ingredients thoroughly.
