Caribbean Saltfish Recipe

Ingredients

4 tablespoons vegetable oil (desired choice)

1 cup sliced onions

1 cup bell peppers (different colors)

½ cup green onions

¼ cup celery 

3 sprigs fresh thyme, leaves removed

4 large garlic cloves (crushed)

3 medium diced tomatoes

Choice of hot pepper, minced, to taste (optional)

One pack saltfish, broken into small pieces or shredded


**(These instructions are for overnight process. Saltfish has been boiled once for 20min. Taste test  thickest part of fish for desired saltiness. If fish is still too salty for you, change water, and repeat boiling process for 20min each time after taste test).


Instructions

Rinse saltfish/salted cod under cold running water until any salt on the surface is washed away. 

Then transfer to bowl and cover with fresh water. Soak at room temperature for 1 to 2 hours or refrigerate overnight. (Overnight process, reduces the amount of boiling time for the fish).

Drain saltfish, discard soaking water, transfer to saucepan/pot, and cover fish with fresh water. Bring to a boil over medium-high heat for 20min. once the saltfish is cooked and seasoned to your liking (taste test), drain, and set aside to cool.

Gather the ingredients.

Add oil to skillet and heat over medium heat.

Add fresh vegetables and sauté until translucent. Minus the garlic and tomatoes.

Add thyme, garlic and cook for 5min. Then, add tomatoes for an additional 5min.

Add shredded saltfish, mix well, and reduce heat to medium low and let cook for 5-7min. remove from heat and serve hot.
