Pressurized Souse Water
Approximately 2lbs bull foot
1 tbsp salt (per water change)
¼ cup garlic glove or 8 large ones
Souse Water
9 ½ cup of water for about
3 medium limes
1 tbsp salt adjust to taste
½ French cucumber (or cucumber of choice)
2 clove garlic grated
1 cup cilantro
1 cup celery
½ cup green onions
1 to 2 stems of thyme
2 pack Maggie Chicken Flavored Soup Mix
Hot pepper seasoning (optional)
Instructions
Pressurized – on medium heat:
1. Wash bull foot with lime or lemon and some vinegar thoroughly.
2. Once bullfoot is cleaned and drained, add bullfoot to pressure cooker pot, cover bullfoot with preboiled water, add garlic, salt, add pressure cooker cover and let pressure buildup. Once the pressure builds up, then pressure for 15min.
3. After 15min, drain off the first batch of water, make sure garlic pieces are added back into pot, or just add more fresh garlic, and add bullfoot back to pressure cooker pot and cover bullfoot with the second batch of preboiled water.
4. Once pressure builds up, cook for 20min. After 20min, drain and put bullfoot aside.
*Add the cucumber at the very end. I like my cucumber added while cooking, but traditionally, it is added at the end just before serving.
*This process takes 3 to 5 minutes to cook. Remove from stove and serve best hot.
*Homemade hot pepper was added, you can also add habanero peppers, jalapeno peppers, or omit altogether.
Souse water – cook on medium heat:
1. In a pot, add bull foot
2. Add enough preboiled water to cover the bull foot
3. squeeze limes into the water (adjust to taste) more or less
4. Then add grated garlic, cilantro, celery, and thyme
5. At this point, add Maggie chicken flavored soup mix. Use a meshed strainer, add Maggie packs, and partially dip meshed strainer into liquid. You want the seasoning for flavor, not the noodles. Taste and if needed, adjust with salt to taste.
6. I added some homemade pepper seasoning, made from different types of hot peppers. This part is optional. You can use any spice/heat of choice or omit it altogether.
